Young Ginger! Tender, juicy, no skin, not stringy. Super medicinal (anti-inflammatory/viral/disease/etc.; great for nausea and stomach issues), and great in the kitchen and for Asian dishes. Make a soothing tea, grate into dishes, pickle it, etc. Freezes very well whole. Can store in fridge for 1 week, but then freeze. Remove from freezer grate and place back in freezer.
